Mini Keto Pizzas Made With A Simple Parmesan Crust
I don’t know about you, but I LOVE toasted cheese, so I figured… why not make it into a pizza crust!? Crispy snacks while trying to follow a low carb diet are nearly impossible to find, so these little pizzas are absolutely amazing when you’re used to eating boiled eggs all day.
I gotta tell you, it worked like a charm! You simply bake flat piles of grated parmesan until they become crispy and golden brown. Now you just layer on a little bit of sauce, mozzarella cheese, pepperoni, and Italian seasoning. Place them back in the oven for a few minutes, and BAM! The most amazing quick and easy little pizzas in less than 15 minutes.
Simply line a large sheet pan with parchment paper and make 9-12 small piles of grated parmesan. Use the back of a spoon to flatten them out into the shape of a pizza crust.
Bake in a 350 degree oven for 5-8 minutes, or until the cheese turns crispy and golden brown.
Allow them to cool for a few minutes, and then top with a small amount of pizza sauce. Not too much! You don’t want them to become soggy and messy.
Next, top with a pinch of shredded mozzarella cheese.
If you can find mini pepperonis at the store, I recommend using those for your topping, but you can also cut your pepperoni into smaller pieces as shown below. Sprinkle with Italian seasoning if desired.
You guessed it, now place them back in the oven for 3-5 minutes or until the mozzarella cheese is melted. As soon as you pull them out of the oven, place them directly onto a few paper towels to absorb the grease for a few minutes (this will keep them crispy and delicious).

- 12+ tbsp grated parmesan cheese
- 1/4 cup pizza sauce (low sodium is best)
- 1/2 cup shredded mozzarella cheese
- mini pepperonis
- Italian seasoning
Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
Make piles of grated parmesan about 1 inch apart directly onto the parchment paper, and then use the back of a spoon to flatten them out into discs. I made mine with 1 heaping tablespoon each, and I could have fit about 12 on the pan.
Bake for 5-8 minutes, or until the cheese becomes crispy and golden brown.
Remove from the oven and allow the parmesan crusts to cool for a few minutes. Top each one with a small amount of pizza sauce, shredded cheese, pepperoni, and Italian seasoning.
Place them back in the oven for 3-5 minutes or until the mozzarella cheese is melted.
Remove from the oven and immediately place them on a few paper towels to soak up the grease for a few minutes before eating. Don't pass on this step! This will keep your crust crispy and scrumptious.
