Not only is this easy keto side dish one of my favorite recipes, it’s also really quick and easy to make thanks to frozen cauliflower rice. You’re simply going to microwave it according to the package instructions, and then sauté the cooked cauliflower rice for a few minutes with butter, minced garlic and parmesan. It takes less than 10 minutes to whip up and your entire family will love it!
This warm and cheesy cauliflower rice pairs really well with just about any meal including bbq, chicken, steak or seafood. I even make it to eat alone as a last minute vegetarian lunch or dinner idea. It’s also my go-to healthy recipe for when I’m just too darn busy or tired to cook!

- 1 (10oz) bag frozen cauliflower rice
- 3 tbsp butter
- 1 tbsp minced garlic (heaping)
- 1/3 cup grated parmesan
- salt & black pepper to taste
- red pepper flakes for garnish (optional)
Microwave the cauliflower rice according to the package instructions, only shave off about 1 minute of cook time.
In a medium skillet, melt the butter and saute the minced garlic for about 1 minute over medium heat.
Add the mostly cooked cauliflower rice to the pan and cook for 2-3 minutes, stirring regularly.
Add the parmesan cheese and mix well. Do a taste test and add salt & pepper as desired.
Garnish with crushed red pepper and enjoy!
