Zucchini boats are definitely a fun and exciting way to eat veggies. They are a go-to dinner idea for my family especially with ground chicken or beef because they’re so cheap and easy to throw together on busy weeknights.
Easy Low Carb Buffalo Chicken Zucchini Boats
- 4 medium zucchini
- 1lb ground chicken
- 1/2 cup buffalo wing sauce
- 1/2 packet ranch seasoning mix (about 2 tbsp)
- 8oz bag shredded mozzarella (2 cups)
Start off by prepping your zucchini boats by scraping out the guts with a melon baller or small spoon, and then place them in a greased 9×13 baking dish.
Cook and chop the chicken until no longer pink and then mix well with the buffalo wing sauce and ranch seasoning; fill the boats with the chicken mixture.
Top with about 2 cups of shredded mozzarella cheese, cover with foil and bake in a 400 degree oven for 30 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese starts to brown.
Enjoy as is or with a little extra buffalo sauce and ranch dressing. Yum!
