Easy Keto Mexican Ground Beef & Cauliflower Rice
- 1lb ground beef
- family size bag of frozen cauliflower rice
- diced onion and bell pepper (I buy the pre-chopped stuff in the produce section)
- 1 can diced tomatoes & green chilies
- 1 packet taco seasoning
- 1-2 cups shredded cheddar cheese
Start off by sautéing the onion and bell pepper with a little bit of olive oil or butter until they become soft.
Add the ground beef to the pan and chop it up into small chunks until no longer pink. Stir in about 3/4 cup of water and a packet of taco seasoning.
Add the frozen cauliflower rice and a can of Rotel in with the beef mixture; stir and let simmer for about 10 minutes or until hot.
Top with a generous amount of shredded cheese and dig in! Even your non-keto family and friends will enjoy this quick and easy low carb dinner recipe. It’s full of flavor but with very little effort. If you have kids or picky eaters, you can always set aside some of the beef mixture to make them tacos on the side.
