This yummy family dinner idea is perfect for those busy weeknights when you want to cook a creative meal without a lot of hassle. The combination of Mexican inspired ingredients combined with cheesy pasta is incredible! It makes enough to feed a large family but is also just as delicious leftover for a second meal.
It’s made with simple and cheap ingredients that are a breeze to throw together: ground beef, spaghetti, cheese, chili beans, taco seasoning, and tomato sauce. Simply toss everything together, top with cheese, and bake!

As you can see from the pictures, this is some serious comfort food! This baked pasta is loaded with lots of cheese and full of flavor in every bite. There may be a few carbs in there, too. 🙂

Simply brown the ground beef and mix with water and taco seasoning. Toss the seasoned beef with the beans, tomato sauce, taco seasoning, and cubed Velveeta cheese. Allow it to simmer for a bit until the cheese is melted and everything is well combined.

Toss the creamy ground beef and bean mixture in with a package of cooked and drained spaghetti.

Dump it into a greased 9×13 casserole dish.

Evenly sprinkle shredded cheese all over the top and bake in a 350° F oven for 15-20 minutes.

Garnish with diced tomatoes, green onion, sour cream, avocado, cilantro, jalapeño, hot sauce, or anything else “taco-ie” that you’d like!

Cheesy Taco Spaghetti Casserole
Ingredients
- 1 (1lb) box thin spaghetti noodles
- 1 pound ground beef
- 1/4 cup water
- 1 packet taco seasoning
- 1 (15oz) can chili beans (undrained)
- 1 (15oz) can tomato sauce
- 16 ounces Velveeta cheese (cubed)
- 1 cup shredded cheese
Instructions
- Preheat oven to 350° F and grease a 9x13 baking dish.
- In a large pot, cook the pasta according to the package directions.
- Meanwhile, in a large skillet, brown the beef on medium heat until no longer pink. Add the taco seasoning and water; mix well.
- Add the undrained beans, tomato sauce, and cubed Velveeta cheese to the skillet. Stir and let simmer until the Velveeta melts.
- Add the creamy beef and bean mixture to your drained pot of spaghetti noodles and mix until well combined.
- Dump the spaghetti mixture into your greased casserole dish and top with shredded cheese.
- Bake uncovered for 15-20 minutes. Enjoy!
