Chicken is by far the most favored meal in my house, but baking chicken breasts in the oven has never been my preferred way of cooking it. Until now! Thanks to cream cheese and the many ways of flavoring it, cheesy baked chicken has become my staple on busy weeknights.
The ingredients here are naturally low carb, but you can serve this rich and savory chicken with a side of pasta or rice for the kids or anyone not following a low carb diet.
1In a small bowl, mix together the softened cream cheese, sun-dried tomatoes, cooked spinach, shredded cheddar, and garlic powder.

2Place the chicken in a large greased baking dish and season each side generously with black pepper and a little bit of salt. Next, plop the cream cheese mixture evenly onto each breast and use a spatula or the back of a spoon to spread it over top.
3Bake in a 425 degree oven for about 20 minutes or until the chicken is cooked through. That’s it! Serve alone or over a bed of rice or pasta. This chicken is also excellent with a side of greek salad and garlic bread.

- 2 large chicken breasts (About 1.5 pounds)
- 3 cups fresh spinach
- 6 (oz) cream cheese
- 1/4 cup sun-dried tomatoes
- 1/2 cup shredded cheddar cheese
- 1/2 tsp garlic powder
- salt & pepper to taste

Preheat your oven to 425 degrees and grease a 9x13 baking dish.

Either cut your chicken breasts in half lengthwise, or pound the chicken and then cut them in half. Basically, you want 4 thin sliced breasts, no thicker than 1/2 inch each.

Pat the chicken dry and place them in your prepared baking dish. Sprinkle each side with salt and pepper.

Cook the spinach on your stovetop until wilted. If you're using sun-dried tomatoes packed in oil, drain and pat out any excess grease.

Microwave the cream cheese until very soft (about 20 seconds) and then stir it together with the cooked spinach, sun-dried tomatoes, cheddar cheese, and garlic powder.

Evenly plop the cream cheese mixture onto your chicken breasts and then spread it over top with a small spatula or the back of a spoon.

Bake uncovered in the center rack of your oven for about 20 minutes or until the chicken is cooked through.
