Crispy Mini Pizzas (Keto & Low Carb)

Are you looking for easy keto snacks that are simple to make with just a few ingredients? You've got to try this quick way of making mini pizzas in your oven! The ultra crispy pizza crusts are made with just grated parmesan cheese. Then you top with sauce, mozzarella, and pepperoni. They're like eating a giant pizza chip!

Ingredients

  • 12+ tbsp grated parmesan cheese
  • 1/4 cup pizza sauce (low sodium is best)
  • 1/2 cup shredded mozzarella cheese
  • mini pepperonis
  • Italian seasoning

Instructions

  1. Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.

  2. Make piles of grated parmesan about 1 inch apart directly onto the parchment paper, and then use the back of a spoon to flatten them out into discs. I made mine with 1 heaping tablespoon each, and I could have fit about 12 on the pan.

  3. Bake for 5-8 minutes, or until the cheese becomes crispy and golden brown.

  4. Remove from the oven and allow the parmesan crusts to cool for a few minutes. Top each one with a small amount of pizza sauce, shredded cheese, pepperoni, and Italian seasoning.

  5. Place them back in the oven for 3-5 minutes or until the mozzarella cheese is melted.

  6. Remove from the oven and immediately place them on a few paper towels to soak up the grease for a few minutes before eating. Don't pass on this step! This will keep your crust crispy and scrumptious.
