Ingredients
2-3large tomatoes
1(8oz)block mozzarella cheese
2bunches basil
3tbspextra virgil olive oil
salt, pepper & garlic powder(to taste)
bread for serving(sourdough, French, or any baguette)
Instructions
Start by chopping the block of mozzarella, tomatoes, and fresh basil into small chunks.
Toss with about 3 tbsp of extra virgin olive oil and then season to your liking with a little bit of salt, black pepper, and garlic powder. Go easy on the seasoning, especially the salt.
Enjoy on your favorite toasted bread! It helps to cut the bread into small manageable pieces before serving.

What else could you serve this on? How about grilled chicken! I'm definitely trying that next. I could eat this cheesy tomato mixture on just about anything.
Some other add-in ideas? We've made this a few times with chopped avocado added to the mix. You could also drizzle with a creamy balsamic glaze. I think I'm drooling now.
How do you toast the bread in bulk? If you're making several pieces of toast all at once, we simply use our toaster oven for a few rounds, but you can also place the bread on a large sheet pan and bake in a 400° F oven for about 5 minutes.
What kind of bread should I use? I've tried this mixture on just about every fresh bread variety from the deli section. You really can't go wrong, but a sturdy bread that crisps well when toasted balances wonderfully with the juicy tomatoes and olive oil.
