Ingredients

  • 1 (10oz) bag frozen cauliflower rice (about 2 1/4 cups)
  • 2 tbsp olive oil
  • juice of 1/2 lime
  • 1/4 cup cilantro (chopped)
  • salt & pepper to taste

Instructions

  1. Microwave the cauliflower rice according to the package directions; open the bag and set aside.

  2. Heat the olive oil in a pan over medium heat.

  3. Add the cauliflower rice to the pan and stir in with the oil until heated through.

  4. Squeeze in the lime juice and season to taste with a few pinches of salt (and black pepper if desired). Do a taste test to see if it's limey and salty enough for you. Adjust accordingly.

  5. Add the cauliflower rice to a large bowl and gently stir in the chopped cilantro.

  6. Serve warm and store any leftovers in the fridge for up to 3 days.
