3 Ingredient Keto Peanut Butter Cookies (Quick & Easy!)

  • 1 cup peanut butter (with no added sugar)
  • 1 large egg
  • 1/2 cup erythritol (or keto-freindly sweetener of your choice)


  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.

  2. Combine all ingredients into a mixing bowl.

  3. Plop about 15 1-inch sized balls of dough onto your baking sheet.

  4. Use a fork to press down on and flatten the dough a bit.

  5. Bake for 10-15 minutes.

  6. Allow the cookies to cool for at least 5 minutes before eating.

Recipe Notes

You can use any keto-friendly sweetener of your choice for this recipe (I use granulated erythritol). However, remember to adjust the amount based on the sweetener type. Most sweeteners will give you a conversion with regular sugar, so if it helps, this recipe would call for about 1 cup of regular sugar.
