1(10oz)can diced tomatoes and green chili(undrained)
1(1oz)packet of ranch seasoning mix
1tbspchili powder
1tspcumin
1tspgarlic powder
1cupshredded cheddar cheese(plus more for topping)
Instructions
Place everything into your slow cooker except for the cheddar cheese.
Use a spoon to break up the cream cheese and mix everything together.
Cover and cook on LOW for about 6 hours or until the chicken shreds easily.
Remove the chicken from the slow cooker and shred with a couple of forks. Return to slow cooker along with about 1 cup of shredded cheddar. Stir and cook for an additonal 15 minutes.
Serve alone or topped with cheddar cheese, avocado, cilantro, jalapenos, tortilla chips, Fritos, or anything else you'd like.
Notes
Feel free to use the beans of choice or whatever you happen to have on hand (black beans, white beans, chili beans or kidney beans).
This recipe is very family friendly and shouldn't be too spicy or salty, but you can also add in a little cayenne, onion powder, or anything else to suit your taste.
